Diners run on a strange kind of trust. You sit down, scan a laminated menu the size of a small newspaper, and assume every dish gets the same care from the kitchen. That's rarely true. Some things are built for a cook who's flipped ten thousand of them and could do it half asleep, while other things are frozen and reheated because nobody's watching that closely. Here are 1o dishes that tend to fall flat, and 10 you can order without thinking twice.

1. Chicken Fried Steak
The steak underneath all that gravy is usually a mystery cut, pounded thin and fried in oil that's been recycled more times than anyone dares to admit. Order this on a good day and it's fine; order it on a slow Tuesday and you're eating soggy cardboard.
2. French Onion Soup
Most diners aren't caramelizing onions for forty minutes. They're doctoring a canned base and burying it under broiler cheese that looks great in photos and tastes like salt with extra steps. If the crock isn't scalding hot when it lands, walk away from this one entirely.

Someone's cracking real eggs and folding them around whatever you asked for, right there on the flat-top. It's simple, and it's nearly impossible to get wrong.
5. BLT
This sandwich only has three things to get right, and diners usually nail all of them. When the tomato's actually ripe, it can beat sandwiches that cost three times as much.

Whoever runs the flat-top has made ten thousand batches of these, and it shows in the crust. The combination of crispy on the outside and soft in the middle doesn't happen by accident, it happens from repetition.
