Some meals are delicious straight off the stove, but others seem to reach their full potential after spending a night in the refrigerator. As ingredients sit together, flavors can mingle, spices can become more noticeable, and sauces may develop a richer, more balanced taste. Of course, not every dish benefits from waiting, but if you've ever looked forward to leftover chili more than the dinner you ate yesterday, you already understand the appeal. Here are 20 foods that are often worth saving a portion of for tomorrow.
1. Chili
Chili is always one of my favorites to have the next day. It allows the flavors to meld together from the beans, tomatoes, meat, and spices. It will probably taste better if you microwave it the next day. Heat some up on the stovetop and top it off with your preferred toppings.
2. Lasagna
Lasagna can taste very good with a lot of cheese if you make it that night. Cutting squares out of it can be hard when it's hot. But if you refrigerate it overnight, the noodles, sauce, cheese, and whatever you fill your lasagna with will be easy to cut.
3. Spaghetti Bolognese
Any type of meat sauce will taste better the next day if you allow it to sit. Tomatoes, onions, and garlic are some great ingredients to add. It will taste amazing over some pasta the next day.
4. Beef Stew
There are many reasons why beef stew will be good the next day. It's packed with meat, veggies, broth, and seasoning. After sitting in the fridge overnight, it may taste even better.
5. Curry
There are some great dishes that taste better the next day because they're packed with spices. Any kind of curry you cook will taste good the next day. Chicken curry, coconut curry, and even lentils can benefit from this. When you make these meals, they'll thicken up as they refrigerate.
6. Soup
Soup will often taste better if you allow it to sit. Vegetable soup, chicken soup, or any kind of bean soup can be good the next day. Some great flavors to add are garlic and seasoning to make your broth perfect.
7. Meatloaf
Having meatloaf the day after can be pretty delicious because the meat and seasonings can taste even better the next day. You can heat up some meatloaf with your potatoes or eat it cold. Another way to eat it is to cut it into thick pieces and put some mustard and pickle on it to eat like a sandwich.
8. Pulled Pork
Pulled pork can have lots of flavor if you allow it to sit. It's bound to have seasoning and sauce on it, so it's only going to get better. You can heat up some pulled pork and put more BBQ sauce on it. Pile it onto buns for sandwiches, tuck it into tacos, or add it to a baked potato when you want something filling without much extra work.
9. Enchiladas
Your enchiladas can taste amazing if you eat them the next day. It allows the tortillas, meat, and sauces to sit together and meld their flavors. The tortillas can absorb the sauce a bit more when refrigerated. Reheat individual portions in the oven or microwave, then add fresh cilantro, salsa, or sour cream just before serving.
10. Baked Ziti
This is another dish that can taste great if you have it the next day. Baked ziti is easy to make if you want to prepare it ahead of time. After the dish has cooled, you can refrigerate it. It's bound to taste better, and when you cut into it, everything will hold together nicely.
11. Meatballs in Tomato Sauce
Meatballs can absorb the flavor of the tomato sauce after sitting in it. So that's a great reason to leave some leftovers. You can also have them over noodles or throw them in a sandwich.
12. Shepherd's Pie
Shepherd's pie is another good meal to have the next day. It's packed with meat and veggies under a mashed potato topping. After it's cold, the pie will be a bit firmer and won't slide around as much. Heat it until it's hot in the middle, and throw it in the oven if you want it a little crispy on top.
13. Stuffed Peppers
Stuffed peppers usually contain a mixture of rice, meat, vegetables, herbs, and sauce, giving the filling plenty of ingredients to blend together overnight. The rice can absorb additional flavor from the surrounding juices, while the tomato sauce becomes more evenly distributed throughout the dish. Warm the peppers in the oven or microwave, and add a little extra cheese if you'd like to freshen up the leftovers.
14. Homemade Pizza
Cold pizza has a loyal following, but reheated pizza can be even more enjoyable when you give it a little attention. The toppings and sauce remain flavorful overnight, while reheating a slice in a skillet can help restore a crisp bottom without turning the crust chewy. It's a practical way to revive yesterday's dinner, particularly if you don't want to heat up the entire oven for one or two slices.
15. Fried Rice
When you cook fried rice, it's usually better if you have leftover rice. When you make fried rice, you want to use rice that you've cooked and allowed to sit in the fridge. It's best if it's from the previous day and you cook some fried rice with it.

Bean burritos are full of beans, which have tons of flavor. Once you refrigerate your beans, they can become even better if they have spices in them. You can wrap them in a burrito with rice and other items.

18. Marinated Bean Salad
If you want your beans to have even more flavor, marinate them. You can also mix some veggies in there with your beans. If you make this salad, it will taste even better after it sits for a few hours. This is also a convenient option for meal prep because you can prepare it ahead and serve it cold with lunch or dinner.

Another great thing to make is overnight oats. These are best if you let them refrigerate the night before you plan on eating them. You can add different things to overnight oats that will taste good in the morning. You can prepare individual jars for several mornings at once, although fresh toppings like sliced bananas or crunchy granola are often best added just before eating.
20. Banana Bread
Banana bread can be delicious straight from the oven, but its flavor and texture often improve after it has cooled completely and rested overnight. The moisture distributes throughout the loaf, helping the crumb become more evenly tender while the banana flavor remains prominent. Wrap it once it's fully cooled, then enjoy a slice the next morning with coffee or toast it lightly and spread on a little butter.
